We all know of the deadly magnitude 7.0 earthquake that struck Haiti, Tuesday January 12th, just ten miles out from the capital of Port-au-Prince. The earthquake caused homes and vital infrastructure throughout the area to collapse, trapping and killing thousands. An estimates three million survivors have been affected by this tragedy. In Belize, a number of initiatives have been taken to raise some much needed funds for the cause. The Belize Red Cross has indicated that since it launched its appeal it has raised a half million dollars with the support of the many organizations and individuals that have and are still contributing to this effort.   WHATS NEW ???· San Pedro Fitness Club has New Management
Our fitness club has some new Managers!!! Jinnie and her husband Marc moved to Ambergris Caye from London, England, just over a month ago to take over the running of the fitness facility, the San Pedro Fitness Club. One of the first things they have accomplished is refurbishing our fitness room at the back of the main building. Recently, they hosted their first class, Bu-Jitsu, a mix of martial arts great for getting fit wow, did everyone work up a sweat! Jinnie & Marc are in the process of giving the whole club area a make-over including opening the pool side bar again very soon. They have also nearly finished the roof top terrace which is great for watching the sunset. It will be a beautiful Mayan themed haven which is also available for private hire, as is our pool. So, if there are any special occasions coming up, why not pay them a visit and see for yourself what’s new! Besides the pool and the gym, the San Pedro Fitness Club also has two tennis courts and a volleyball court, something for everyone. Dive schools have recently been using the pool for instructor training as it is the deepest on the island and by far, the biggest! We look forward to seeing you there!

Chances are that you have or will be seeing them flying over Ambergris Caye, and if you were wondering what the golf carts with wings are, they are ultra-light planes. The ultra-light planes will only be used for recreational flying. The recreational flights will be another added adventure opportunity for local and visitors to San Pedro Town to enjoy a complete aerial view of La Isla Bonita. The ultra-light planes are just two of five that will be offering flyovers over San Pedro, Ambergris Caye. Guests get a 1 hour experience for $75 US per flight and tours can be booked through our front desk here at Exotic Caye Beach Resort. Belizean RecipeCARIBBEAN FUDGY BROWNIES
Prep -heat oven to 350°F. Grease 8 inch square baking pan, greasing only the bottom and leaving the sides ungreased. In a medium saucepan, stir together chocolate and butter over low heat setting until smooth, about 5 minutes. Remove from heat. Stir in sugar. Whisk in eggs, one at a time, stirring well after each addition. Stir in flour, baking powder and salt, vanilla and rum; stir only until mixture is smooth and all ingredients are combined. Spread mixture into baking pan. Bake for 25 to 35 minutes or until brownies just begin to pull away from sides of pan. Watch carefully near later stage of cooking period to prevent overbaking or brownies may become dry. If your brownies consistently are dry or overbaked, try reducing oven temperature by 25 degrees. Allow to cool before slicing into squares. Note: To make a double batch, double all ingredients and use a 13x9 inch baking pan. Bake 35 to 40 minutes. sprinkle chocolate chips over top just before baking.If you like your brownies a little lighter, add 1/4 teaspoon baking soda and a teaspoon of molasses. Joke Of The DayA man walks into a hamburger shop and orders a regular meal. Later, the waitress brings his meal to him. He takes a bite out of it, and notices there's a small hair in the hamburger. This year’s annual carnival block party was a major success, as hundreds flocked to San Pedros, Central Park to enjoy great food, drinks, music and entertainment put together by the San Pedro Town Council. Performances by The San Pedro Dance Company and Barbara’s Dance Group kept the crowed entertained during the night. The colorful and rich culture of Carnaval in San Pedro commenced on Sunday, February 14, with the traditional street painting and colourful dancing. Drawing a large crowd of followers were once again the men dressed in ‘drag’ with live music from Rompe Raja Group. The final day of Carnaval was one of the best to date with hundreds taking to the streets to paint, splashing a rainbow of colors amongst all those participating under the sunshine. And so another year of carnval has come to an end. “Alegria en el Corazon – que viva nuestra tradicion”…Que Viva el Carnaval!!!
